Somerset Pork and Apple Casserole served with Rosemary Roasted Potatoes
Week 3 Spring/Summer
Ingredients
- 500g Diced Pork
- x2 Cooking apples
- x1 Diced onion
- x3 Carrots
- Green beans
- x1 Vegetable stock cube
- Rosemary
- x3 Potatoes
Method
- Fry the pork in a large pan until browned, then add the onion and cook until soft.
- Whilst waiting for the pork to brown, peel and chop your potatoes, toss them in oil and add the rosemary.
- Place the potatoes on a baking tray and cook on 200 degrees for 45 minutes or until soft and crispy.
- Chop the apples and carrots up into small pieces and add them to the pan.
- Pour in 500ml of boiling water and mix in the vegetable stock.
- Add the green beans to the pan, you can chop these into smaller pieces if you would prefer.
- Bring back to the boil and then simmer. Add low salt gravy granules if preferred to make the mixture thicker
