Spaghetti and meatballs with a mixed vegetable sauce
Week 1 - Spring/Summer menu
Ingredients
- Spaghetti pasta
- 1 Garlic clove
- 1 Onion
- 1 Chopped tomato
- 1 Pepper
- 1 Courgette
- 500g Minced beef
- 1 Carrot
Method
- Chop your pepper, onion, garlic, carrot and courgette into small pieces. Add the onion and garlic to a separate bowl and then add the carrot and courgette to a large frying pan and cook on a medium heat in a little bit of oil.
- Add the minced beef to the bowl that contains the garlic and onion and use your hands to kneed it altogether. Then take small pieces at a time and roll them into small balls.
- Place the meatballs onto a baking tray and place in the oven for around 20 - 30 minutes on 200c
- Add the chopped tomato to the vegetables and gently simmer on a low heat
- Place the spaghetti into a pan of boiling water and boil for around 15 minutes
- Once the meatballs are cooked, add them to the chopped tomato and vegetables and stir in
- Serve and enjoy. Add cheese to the top to make it even more tastier!
