Spaghetti and meatballs with a mixed vegetable sauce

Week 1 - Spring/Summer menu

Ingredients
  • Spaghetti pasta
  • 1 Garlic clove
  • 1 Onion
  • 1 Chopped tomato
  • 1 Pepper
  • 1 Courgette
  • 500g Minced beef
  • 1 Carrot
Method
  1. Chop your pepper, onion, garlic, carrot and courgette into small pieces. Add the onion and garlic to a separate bowl and then add the carrot and courgette to a large frying pan and cook on a medium heat in a little bit of oil.
  2. Add the minced beef to the bowl that contains the garlic and onion and use your hands to kneed it altogether. Then take small pieces at a time and roll them into small balls.
  3. Place the meatballs onto a baking tray and place in the oven for around 20 - 30 minutes on 200c
  4. Add the chopped tomato to the vegetables and gently simmer on a low heat
  5. Place the spaghetti into a pan of boiling water and boil for around 15 minutes
  6. Once the meatballs are cooked, add them to the chopped tomato and vegetables and stir in
  7. Serve and enjoy. Add cheese to the top to make it even more tastier!
