Creamy Chicken Masala with Wholegrain Rice
Week 1 Autumn/Winter
Ingredients
- 4x Chicken breasts
- 1x Garlic clove
- 1x Onion
- 1x Pepper
- 1x Chopped tomatoes
- x1 Courgette
- x1 Mild masala paste
- Wholegrain Rice
Method
- Fry off your garlic, onion, peppers and courgette in a bit of oil until soft
- Add a tin of chopped tomatoes and a tablespoon of masala curry paste and gently simmer
- Cook the chicken until cooked throughout then add to the sauce
- Boil the rice following the pack instructions
- Serve with a side of onion bhajis and homemade raita dip
