Mediterranean Chicken Tray Bake Served with Potato Cubes
Week 1- Spring/Summer Menu
Ingredients
- 4x Chicken breasts
- Sweetcorn
- 2x Potatoes
- 1x Garlic clove
- 1x Onion
- 1x Chopped tomatoes
- 1x Peppers
- x1 Courgette
Method
- Chop your potatoes into cubes and add them to a tray. Use a tablespoon of oil and sprinkle over the potato wedges.
- Place the tray into a preheated 200C oven and bake for 30 minutes.
- On a medium heat, cook the garlic, onions, peppers and courgette in a little bit of oil.
- Add the chopped tomatoes and gently simmer on a low heat.
- Cook the chicken until cooked throughout and add to the tomato sauce mix
- Boil the Sweetcorn for 10-15 minutes in a pan
- Boil the Sweetcorn for 10-15 minutes in a pan
