Salmon and Leek Pastry served with Peas, Sweetcorn and Garlic Butter New Potatoes
Week 1 - Autumn/Winter menu
Ingredients
- x4 Salmon Fillets
- x1 Leek
- 50g Butter
- 500ml Milk
- 50g Plain Flour
- Peas and Sweetcorn
- x1 Bag of New Potatoes
- Puff Pastry Roll
Method
- Preheat the oven to 180 degrees.
- Place the peas and sweetcorn in one pan and the new potatoes in a seperate pan and boil on a low heat.
- Place the salmon and leek in a pyrex dish with a dash of water and place in the oven.
- Pour the milk into a pan and bring to the boil.
- Add the butter to a seperate pan and melt before adding the flour, mixing them together until a paste forms.
- Slowly pour the milk into the paste and stir on a low heat until the sauce thickens.
- Once the salmon is cooked, use a fork to seperate the fillet across the tray and pour on the white sauce.
- Top with the puff pastry and cook for a further 20 minutes until slightly brown.
- Serve and enjoy!
